David Cavalier
Food Director
Charlton House Catering

David Cavalier’s food has attracted Michelin stars and won accolades from leading food critics throughout his career. He has held many prestigious posts including that of joint head chef/partner at L’Escargot, executive chef at Mosimann’s and High Holborn, and chef/proprietor of Cavalier’s.

In 2002 he took the unprecedented step of joining independent contract catering firm, Charlton House.

The first Michelin-starred chef to be employed full-time within the contract catering sector, David Cavalier is a true ambassador for the sector. Seven years on he continues to inspire and mentor young chefs, both within Charlton House and beyond.

His appointment with Charlton House was a strategic move by the independent caterers to help gain an important foothold into the City. Since Cavalier’s involvement, Charlton House has won many prestigious contracts such as City law firms, The Law Society, the RIBA and The Institution of Electrical Engineers, which are collectively worth many millions in annual turnover.

But it is his passion for good food and his interest in improving craft skills that make him a shining example to this industry. His core role is one of mentor; Cavalier works side-by-side with Charlton House chefs throughout the UK, honing their skills and inspiring them.

His responsibilities are wide and varied, from supporting sales presentations and assisting in the commercial development of the company to coming up with food innovations that bring this sector on par with high quality commercial restaurants.
